Pretzel Necklaces, Llamas, and Beer


It's Monday night, or really early Tuesday morning if you want to get technical, 12:06am. I'm sitting here watching George Lopez, munching on Vanilla Brown Sugar Almonds, and wishing I could travel back in time to Saturday and purchase a large bag {or two} instead of the small bag we decided on. Hindsight is 20/20 I guess. These things are good.

Saturday Garrett and I went to Parker Oktoberfest. Denver and the surrounding areas are known for their eclectic collection of beer and often host festivals celebrating that fact. During this time of year there are several "beer" related events and festivals, and since Garrett loves his beer and I love my festival, we went. Thank you Living Social for the $13 "deal", it was well worth it!

With this "deal" we got a half liter glass mug in which you were allowed to get two types of beer of your choice. Also included was a pretzel necklace and an entrance into a competition. I wanted to enter into the pie eating contest SO bad, I've always wanted to do one of those, but the pies were all fruit pies and fruit pies are gross. I don't think I could actually win, after the equivalent of two slices I would be too full. But, what's better than stuffing your face with pie? 
Nothing, is the answer.

Garrett redeemed the tickets for the beer and I redeemed the ticket for the pretzel necklace. We bought a small bag of Vanilla Brown Sugar Almonds from a local vendor, and watched the children's yodeling contest and some of the adult "strongman" contest. I sipped on fresh brewed sweet tea, spent about 20 minutes in the petting zoo with an adorable 27 year old llama, and munched on a Bierock that Garrett sweetly bought for us in the pouring rain.
On a side note, as you probably know, the rain has been legit here.
Rain is my favorite.


I loved the petting zoo. There were goats, a pig, a llama, a miniature horse AND donkey, and sheep. One of the goats snuck up on my side and stole one of the pretzels off of my necklace. He crunched it right in half and ate it. 


On the way home we got caught in a flash flood warning and waited it out at Chili's.
Good decision babe! 


Sunday was football. You're looking at the number one spot in our fantasy football league! : ) For now...

On a not so happy note, this little guy had dental surgery Monday.
 Garrett and I were nervous wrecks worrying about him but he did just great. He's home now, a little groggy, 12 teeth less, and healing. Poor baby, he is only 4 years old and has a whopping 14 teeth of his original 30 left. The Dr. said that unfortunately he got the short end of the stick in the teeth department with his genetics. We are just glad it's over with!


I am not ready for this week to start AT ALL. 
I'm just living for the weekends these days.

Weekend Stuff


Oh. 
Hey Monday. 
Go away.

I guess I shouldn't complain about Mondays because technically they are still part of my weekend. But, they aren't part of Garrett's. For him they mean the start of a 60+ hour work week.
Ridiculous right?

Oh how we love our weekends around here.

Want to know what we did Friday? What got us all excited and ready to get home from work? 
We opened an Amazon package that we had ordered. It was a water fountain for our boys, AKA our cats.  It was time to replace their old one and plus this new one is ceramic. It's pretty. We set it up for them and got ridiculously excited when they got their first drinks from it.
Do I hear you laughing at us?
 That's ok, I like you anyways.

Saturday we attended a work picnic Ouray was having for it's employees and their families. I didn't know anyone there but Garrett so it was awkward. Not that everyone wasn't super nice. I don't know what has happened to me, but since I have gotten older I have developed a slight case of social anxiety. The day before an event like this, all I can think about it what I'm going to wear and what if people don't like the cupcakes I bring?  And then the day of, I have butterflies pretty much the whole time.
It's silly really.




Saturday evening we had dinner with another couple. She is a girl I know from work, but barely. Yeah, Saturday was a big day for me.  I couldn't believe I agreed to so much social interaction. A picnic AND a dinner date with people I barely know? Usually I would just say no to something like that and hang out at home with Garrett. Wow, I just reread this paragraph and I made it sound worse than it actually is. But really, I am such a homebody it's not even funny.


Sunday was football day. All day. 
Proud to say that I won my first fantasy football game of the season!

The boys like Sundays because they get to cuddle on the couch with their dad all day.

Lately

Really this "lately" is referring to last weekend, but since this weekend is almost over,  I couldn't bring myself to do a last weekend recap.
Behind as usual.

Last weekend we went bowling with a couple of friends. This place had $1 glasses of beer, $1 hotdogs, and $1 bowling games! Um, yes please! I'm hoping we go again soon!

I'm pretty sure I bowled my best game, I broke 100! And...I guess I'll point out Garrett bowled a 140 and it wasn't even his best game. Figures.


On our way home from bowling, Garrett and I stopped at a Mexican food place called Tacos Junior. And by Mexican I mean not a single customer spoke English except Garrett and I, that's when we knew it would be good!

 Sunday we took it easy. We went on a walk and enjoyed the gorgeous flowers still in bloom around us.


So, as you can see, not much is new. We have just been enjoying good food, fun weekends, and Denver's beautifulness.

Oreo Truffle Stuffed Cupcakes

This recipe had me at Oreo, as things usually do, but then I read stuffed cupcakes and knew I had to make them! They definitely live up to their name.

And you know what else? They are easy to make!

You will need:
1 Bag of Oreos
1/2 of an 8oz. block of Cream Cheese
Cake Mix of your choice (I used Duncan Hines French Vanilla)
Icing of your choice (I used Buttercream Whipped)

What you need to do:
Preheat oven to 350 degrees

1. First, make your Oreo truffles. You will want to use about 1/2 of a bag of Oreo's and crush them. You can use a food processor, a blender, or just put them in a bag and crush them as small as you can.  Mix the crushed Oreo's with 1/2 of an 8oz block of cream cheese. Roll into 1 inch sized balls and place in the freezer while you prepare the cake mix. This helps them to maintain their form for baking. 

2. Prepare cake mix as described on the box, but don't bake yet.

3. Line your cupcake pan with liners, and pour just enough cake batter in to cover the bottom of each liner. Now place an Oreo truffle in the middle of each cupcake and cover with cake batter. Bake at 350 for amount of time shown on the cake box. Let cool.

4. For the frosting I just crushed up more Oreo's and mixed them in with the icing. Frost your cupcakes and add an Oreo on top for garnish!
