Cheeseburger Tater Tot Casserole


Hey guys!
Happy Thursday almost Friday!

I was MIA yesterday, and today I'm sharing a recipe with y'all. Everyone knows that a recipe is just filler when you have nothing else to write about. Right? 
Oh, maybe that's just me.

Either way, you will be glad I shared this one, it is delicious and super easy. 


What you need:

1 Can {8oz) Crescent Rolls
2 Pounds Ground Beef {use 80/20 for the best flavor}
1/4 Cup Yellow Onion, Minced
1/2 Cup Ketchup
1 Tablespoon Yellow Mustard
1 1/2 Cups Shredded Cheese {I use Cheddar}
2 Pounds Frozen Tater Tots

What to do:

1. Preheat oven to 350. Spray a 9x13 dish with cooking spray and spread the crescent rolls to completely cover the bottom, squishing them together so that the holes are seamed together.


2. In a large skillet, brown the ground beef along with the minced onion until the meat is cooked. {If you are like me and don't like onions, just chop them up small enough and you won't be able to feel them. Or, you can just leave them out but they really do add great flavor!} 

3. Once the meat is cooked, add the ketchup, mustard, and 3/4 of the cheese. Stir until well mixed and then pour evenly over the crescent rolls. 


4. Add the frozen tater tots on top and bake for 30 minutes. After 30 minutes, sprinkle the rest of the cheese over the top and bake 8 to 10 more minutes to melt the cheese. 


Garrett and I really love this. The sweetness of the crescents paired with the salty sweetness of the meat is delicious! This recipe makes a 9x13 pans worth so you will probably have leftovers. It is still just as good reheated.

Cajun Chicken Pasta

 
I found this recipe on Pinterest labeled, "Chili's Copycat" pasta, and I knew I had to try it. We changed a couple things up from the original recipe and fell in love.
 
While, to me,  it tastes nothing like Chili's Cajun Chicken Pasta {we think it's better!}, it is incredibly delicious!

We have made this a couple times over the past several months and aren't tired of it yet, so I deemed it blog worthy. If you are a pasta fan, you will like!
 
 
What you need:

2 Chicken Breasts
 4 Teaspoons Cajun Seasoning
3 Tablespoons Butter
3 Cups Heavy Cream
Salt/Pepper to Taste
1/4 Teaspoon Garlic Powder
8oz Pasta
Tomatoes if Desired
 
What to do:
 
1. Cook pasta until tender. Drain and set aside. 
 
2. Rub Cajun seasoning onto both sides of each chicken breast. Place 2 Tablespoons of butter into a skillet. Once melted, saute both chicken breasts.


3. When chicken is about half way cooked, get out a large skillet and combine heavy cream, salt/pepper, and garlic powder and cook over medium heat.  
 
4. Let the cream mixture boil for 2 minutes, stirring occasionally. After 2 minutes, add the cooked pasta and turn off the heat. This will thicken up some after it cools a bit.
 
5. Once chicken is thoroughly cooked, remove from skillet and slice. Add chicken to the pasta.
 
6.  If you want tomatoes, just dice them up and place them on top of your plated pasta!


Serve with a slice of garlic bread and a Coke! : )

Baked Fried Chicken


G and I eat alot of chicken. Alot alot. 
I also use Pinterest alot. Alot alot. 
{I know babe, alot is not a word!}

Combine the two and, BAM!, you get Baked Fried Chicken. 


When I first stumbled upon this recipe, I mistakenly thought this was a healthier version of fried chicken. I was wrong. So, if you, like me, thought this was going to be a healthier version of fried chicken, go home, you're drunk! {I know you probably aren't actually drunk. That was just my way of saying this isn't a healthy alternative to fried chicken.}

What you need:

Chicken Breasts, thawed {1 makes 2-3 chicken strips}
1/2 Stick Butter

Mix in a gallon sized Ziploc bag:

1/2 Teaspoon Salt
1 Tablespoon Season All
3/4 Teaspoon Pepper
1 Cup Flour
2 Teaspoons Paprika

What to do:

1. Preheat oven to 400 degrees. Slice thawed chicken breasts into strips. Place strips in a bowl and cover with milk. Let soak 15 to 20 minutes.

 2. Cut up 1/2 stick of butter into squares and place them in the bottom of a 9x13 pan. Melt butter in preheated oven. Spread melted butter around pan.

3. Shake off excess milk from strips and place them in the Ziploc bag. Shake until well coated. Place coated strips into pan.

4. Bake at 400 for 20 minutes. Flip strips over and cook another 20 minutes.

This recipe is so easy and makes such delicious chicken strips. I have made this 3 times since I found the recipe! I serve them with gravy and macaroni and cheese. : )

French Bread Pizza


Dude. You have to try this recipe! So easy, delicious, quick, and cheap!
This is one of my favorite non-dessert recipes I have found through Pinterest. We made these for dinner one night and I made myself more the next day for lunch. That's how good these are! 

What you need:

A loaf of french bread
Pizza Sauce (We used Prego)
Grated Cheese (We used a mix of cheeses)
Toppings (Pepperoni, beef, veggies...etc.)

What to do:

1. Cut bread into slices.
2. Spread bread with pizza sauce.
3. Add your cheese and toppings.
 4. Bake at 400 for 15 to 20 minutes.

Pizza Casserole

I have a YUMMY recipe for you guys today! 
Pizza casserole...I mean the name of it tells you everything right?

What you need:

1 Bag Egg Noodles
1 Extra Large Can of Ragu Sauce
3 Cups Shredded Mozzarella 
1.5 Pounds Hamburger Meat
1 Package Pepperonis
9x13 Baking Pan



 What to do:

Brown the meat and drain.


 Boil the noodles until soft and drain.
Preheat the oven to 350.
 Alright...get ready to layer up this bad boy! 

First goes:
1. A thin layer of tomato sauce on the bottom of a 9x13 pan


2. Half of the noodles.
3. Half of the meat.


4. Half of the sauce.
5. The rest of the noodles.
6. Half of the cheese.
7. The rest of the meat.
8. The rest of the sauce.
9. The rest of the cheese.
10. Pepperonis...you can put how ever many your little heart desires!

Ready to go in the oven!


Cover with foil and bake for 30 minutes at 350 degrees.
After the 30 is up, remove the foil and bake another 15 minutes.

Once done in the oven, let sit for 10 to 15 minutes to cool and settle.

Enjoy!

Chicken Caesar Pasta Salad

Can you believe it? 

A salad on MY blog? I can't really believe it either.

But this salad is GOOD!


I got the idea for it from Cheddars. That's the only place that I will go and order a salad. It's also the only place I leave full and not regretting my meal. I wonder if those two have anything to do with one another? 

What you need:

Penne Pasta
Lettuce
Chicken Breast
Caesar Dressing

What to do:

Put the amount of lettuce that you want in a bowl.

Cook the pasta until tender. I made 3/4 of a cup for just myself but you can adjust it to the amount you want.

 Cook your chicken. 
Sometimes I buy pre-cooked chicken breasts, the kind that you just have to microwave. The last time I made this we marinated our own chicken and grilled it and it was SO much better. But, you can use either one!

Throw it all in the bowl and toss with Caesar (or any dressing that you like)! I barely use any dressing because it grosses me out if I use too much but do it your way!


If you are wanting to marinade your chicken the way I did I used:

Worcestershire 
Italian Dressing
Mustard
Asian Zing Sauce from Buffalo Wild Wings
Salt&Pepper
Caesar Dressing
BBQ Sauce

Weird huh? I just randomly mixed ingredients from our fridge and it turned out DELICIOUS! We both agreed that it was the best chicken we had ever made. Who woulda thought just throwing random things into a bowl would turn out good? I got lucky.

Easy Crockpot BBQ Chicken

I don't know about y'all, but any recipe that deals with simply throwing something in my crock-pot is an automatic favorite! The food usually turns out delicious and all you have to do is throw it in there and let it cook while you do nothing start making dessert. Now that's my kind of cooking!

I found this recipe on Pinterest, of course. Where else?
It turned out yummy and was really easy to make, you can just throw the chicken breasts in there frozen! 

What you need:

4-6 Boneless, Skinless Chicken Breasts
1 Bottle BBQ Sauce
1/4 Cup Vinegar
1 Tsp. Red Pepper Flakes
1 Tsp. Garlic Powder
1/4 Cup Brown Sugar

What to do:

Mix all ingredients (except chicken) together. Place chicken into crock-pot and pour sauce over it. Cook on low for 4 to 6 hours. That's it! 

*I would suggest using a medium sized crock-pot if you own one so that the chicken stays submerged in the liquid, otherwise it may come out a bit dry.



We ate ours with homemade mac&cheese, recipe coming soon, but mashed potatoes and green beans would be yummy too!

We hope y'all are all having a great weekend! It is Denver Restaurant Week here which means a ton of restaurants are having 3 to 4 course meals for $52.80 for two people! Garrett just informed me that 5280 is Denver's elevation, pretty clever. We are thinking about trying out Texas De Brazil...have any of you ever eaten there and if so what did you think?

Simple Crispy Cheddar Chicken



My blog has been pretty recipe heavy lately huh? I think I have just been in the cooking rather than crafting mood for the past couple of weeks. Oh well, more yummy food for us and yummy food ideas for you!

This recipe is, yet again, one of our favorites! It is SO easy and tastes absolutely delicious!

And, yet again, I found this recipe on Pinterest (here) and now am a follower of the great blog Jamie Cooks it Up from which the recipe came! She makes many delicious and simple things, you should check her blog out!

Ingredients:

Chicken:
4 large chicken breasts
2 sleeves Ritz crackers
1/4 t salt
1/8 t pepper
1/2 C milk
3 C cheddar cheese, grated
1 t dried parsley 
Sauce:
1  10 ounce can cream of chicken soup
2 T sour cream
2 T butter
Cut each chicken breast into big chunks.

In a food processor or blender, grind up the Ritz into small crumbs. Toss the salt and pepper in with the cracker crumbs and stir with a fork to combine. Then place the cracker crumbs, milk, and cheese into 3 separate containers big enough to dip the chicken into.


You will dip the chicken into the milk, then the cheese, and last the cracker crumbs, so go ahead and get it set up. You will want a greased baking pan (9x13) ready to lay the chicken in once you are done with the dipping.

This is how I had mine set up:


Grab a big chunk of your chicken and dip it into the milk


Then the cheese


Then the Ritz crumbs


Then lay them all side by side in your baking dish. I threw in a little (or maybe alot, you will never know muahahaha) extra cheese on top. Sprinkle the dried parsley on top of the chicken. This makes it look pretty. Now they are ready to go into the oven.


Cover the pan with foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10 minutes, or until the edges of the chicken are golden brown and crispy. 

Sauce making time! Do not skip this step...the sauce is what makes the chicken extra delicious in my opinion!

Into a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot and the butter is melted. Serve over the chicken. 
Now eat, eat, eat! 




We served ours with macaroni and cheese, and they went perfectly together!

Crock Pot French Dip Sandwich

Happy Sunday!

I hope everyone had a great Thanksgiving vacation! I can't believe it is already over. But, only a month until Christmas!! We are super excited about Christmas because we are going home to Texas for the first time since June and we get to stay a whole week! Getting to see our family and friends is definitely worth the 11 hour drive with two cats meowing and driving us crazy the whole way!


If you are like me with your blog posting, you probably have some posts that get pushed back because you have quite a few lined up. This is one that we made a couple of weeks ago that I just haven't published yet. I found the recipe through the wonderful Pinterest and it is located here.

This recipe is wonderful!! It is now one of our top five favorite recipes that we have made so far. It tastes as good as a restaraunts French dip, it is super easy to make, and it's just as good left over as it is fresh from the crock pot! Score!

To make this delicious entree you will need:
  •  3 1/2 lbs beef chuck roast
  • 16-oz. beef broth (1 1/2 cans)
  • 1 10.5-oz. can condensed French onion soup
  • 6-oz red wine
  • 1 tsp garlic powder
  • salt and pepper, to taste
  • 4-6 French rolls or a French bread loaf
  • sliced swiss cheese

Directions:

1. Trim excess fat off of beef roast and season meat all over with salt and pepper.

2. Pour beef broth, condensed French onion soup, red wine, and garlic powder into slow cooker and place beef roast into liquid.

3. Cook on low for 6-8 hours. Slow cookers have different time intervals that you can select, so work with your cooker. Depending on how the settings on your slow cooker work, the time will vary. Since this is cooking in liquid, you don’t have to worry about the meat drying out in the same way you might if you were roasting the meat in the oven.

4. Take beef out and rest it, covered with aluminum foil, for about 15 minutes. Slice beef and return to slow cooker on low or very low for 30 minutes.

5. Lightly toast the bread and evenly distribute cheese between rolls, if using. Divide beef onto rolls and spoon the beef juice ( from the crockpot, this is your Au Jus sauce) into ramekins or other small bowls and eat everything while it is hot. Serve each sandwich with its own dip.

We put the bread onto a baking sheet under the broiler until lightly browned then added cheese until it was melted.


Optional- I used mayo on my sandwiches just to add to the taste and it was delicious!


I apologize for the lack of pictures on this post. I'm usually picture crazy, but for some reason my sandwich wasn't very photogenic and the pictures turned out blurry. Silly pictures!


Now I am hungry! Every time I look at blogs or Pinterest I end up wanting to eat. I should probably stop looking at them so often!
